What does OVERRUN mean? |

Understanding Overrun:
In order to maximize your profits in the soft serve business you must understand the principle of overrun. Overrun is the percentage of air to mix in a serving. As your soft serve machine freezes it mixes air into the product giving it a smooth creamy consistency. SoftIce is formulated to yield between 40% and 50% overrun depending on the machine and the volume of product you sell. In other words, a gallon of liquid mix will yield 1.4 to 1.5 gallons of frozen product.
To determine overrun, fill one serving container with liquid product and fill another to the same level with frozen product then weigh them both on an accurate ounce or gram scale. The difference in weight will account for the amount of air in the frozen product. Divide the difference in weight by the weight of the frozen product to determine the percentage of overrun.

| Most soft serve machines are designed to run between 40% and 50% overrun. If the machine you are using has an adjustment for overrun we recommend that you adjust the machine so it will run between 40% and 50% overrun. Too much or too little overrun will ruin the consistency of the product. |

Check with your machine manufacturer for specific direction. Generally speaking, SoftIce freezes at a higher temperature than Ice cream or other dairy-based products and therefore freezes quicker using less electricity. |

How difficult is it to mix SoftIce? |

Mixing SoftIce is amazingly simple. Just take a 1-gallon mixing jug and pour in the mix. Then partially fill the container w/ luke-warm water and shake until granules are dissolved. Then fill the rest of the jug with water and shake again so that syrup is thoroughly mixed and consistency is uniform. Pour mixture into the hopper of your soft-serve machine. |

How long will SoftIce last without spoiling? |

In the dry powder form, SoftIce can last on the shelf for years as long as the seal is not broken. After mixed, the SoftIce mixture can last up to 10 days if refrigerated. |
